Pituitary Type Stir-fried Chicken Recipe

This recipe only has a few ingredients, but also a ton of flavor.

Stir-Fried Chicken
-One whole chicken breast, skinned and boned
-½ cup sliced zucchini
-½ cup sliced mushrooms
-1 teaspoon vegetable oil

Marinade:
-2 teaspoons soy sauce (or Tamari for gluten free)
-1 teaspoon cornstarch
-1 slice minced fresh ginger (optional)
-2 sliced green onions
-1 teaspoon dry sherry (optional)

Cut chicken breast into ½ inch squares. Place in a bowl with the marinade.

Heat ½ teaspoon of oil in a wok or frying pan, add the vegetables, and cook stirring continually for 3-4 minutes or until tender. Remove from the pan.

Add the other ½ teaspoon of oil. Drain the marinade from the chicken and save it.

Add the chicken to the hot oil and cook until the chicken turns white. This will be approximately 2 minutes.

Add the vegetables and marinade and toss together in the frying pan for another 1-2 minutes. This will thicken the sauce and heat up the vegetables.
